Charleston, Opposites and Pies!

It's Sunday night again, At least it is here in Venezuela where ALWAYS is hot. I really cant stand the hot over here, it's like Summer all year round and i'm sweating all the time it's quite unconfortable when you use a suit and a tie every single day of the week and you are addicted to wear jackets and sweaters. Well, in my past entry i was talking about the book that i'm reading called "Pride and Prejudice and Zombies" by Seth Grahame - Smith and the kind of music that i'm listening like Avant Garde Rock and Electroswing so i started to think, If this week have a theme, it will called "Opposite Week". Mixing clasic things with modern twists and that's the kind of thing i did this Sunday. Pies! Opposites Pies. Doesn't sound like fun? I did 2 pies. The first is a "Fudge Chocolate Baked Pie" and the Second is a "Cold Chocolate Crust Lemon Pie"



Before start with the recipe i must say that this was a nice week for me. Not biggie, just was fun like always when Rux and Lau are in the office. The Thursday afternoon something appears on the main page of Youtube. Rux and i notice that exist a band who makes "Vintage" (Actually they are retro, not vintage) covers from modern songs like "Beauty and the Beat" by JB and Nicki Minaj, "Call me maybe" by Carly Rae Jepsen or "Dont you worry child" by Swedish House Mafia. The band it called "Postmodern Jukebox" and the song who makes Rux and i watched by the first time was a 1950's cover from the classic "We can't Stop" by Miley "Wacky" Cyrus. I really can't Stand that song or that Singer. but when i hear that cover magically i change my mind about the song. Not the singer. When you grab a Crappy song and turning in something with sophistication and class well you need talent and magic powers to do that. "1920's Javi" is totally in love with this band and he listening like every single minute. Was so funny when Rux and i started to dance Charleston in the office with a 1920's version of "Gentleman" by PSY. Even Funnier when i realize that she doesn't know how to dance charleston at all! After a few dance moves she started to dance a bit better but she really doesn't have a clue.

I'm In pain because i feel like my photographs are still not good enough for a propper Blog, well how can i make enjoyable, profesional photos when i dont have a profesional, propper camera. I'm making my photos with a Galaxy note camera and i'm doing my best with the Photoshop because they look crappy without some fixes. Do you guys recommend me a nice site where i can learn some about food Photography? If you do please let me know because  i'm interested.
  
So, let's Start with the Pies. Before Start to make this pies you must go to Youtube and find your favorite ElectroSwing band, after that you're ready to bake.

For the "Fudge Chocolate Baked Pie" you are going to need:

For the crust:
  • About 30 Vanilla Oreo cookies without their filling
  • 1/4 Cup of Unsalted Butter
Heat the oven to 350°F and arrange a rack in the middle.
Place the cookies in a resealable plastic bag, press out the air, and seal. Using a rolling pin, smash into fine crumbs until uniform. You should have about 1 1/2 cups of crumbs.  Transfer to a medium bowl, add melted butter, and mix until evenly combined.
Pour crumb mixture into a 9-inch pie plate and, using the bottom of a cup or your fingers, press firmly and evenly into the bottom and up the sides. For this dish i used a Square baking plate because i dont have a propper pie dish. Leave the plate rest while we make the filling.

For the Filling:

  • 1 cup Sugar
  • 1/2 Cup unsweeted cocoa
  • 2 tablespoon of flour
  • 3/4 cup Milk
  • 1 tablespoon Butter, Melted.
  • 1 Teaspoon Vanilla Extract
  • 2 Large Eggs
  • 2 Large Egg Whites.

  1. Combine sugar, 1/2 cup cocoa, and flour in a large bowl. Combine milk and next 5 ingredients (milk through egg whites); stir with a whisk until well blended. Add milk mixture to sugar mixture; stir until combined.
  2. Pour mixture into crust. Bake at 350° for 40 minutes or until just set. Cool on a wire rack to room temperature. Cover; chill at least 4 hours. Cover with a Chocolate Ganache and decore with raw almonds.

For the "Cold Chocolate Crust Lemon Pie" You are going to need:

  • About 30 Chocolate Oreo cookies with their filling
  • 1/4 Cup of Unsalted Butter

Pour crumb mixture into a 9-inch pie plate and, using the bottom of a cup or your fingers, press firmly and evenly into the bottom and up the sides. Save into the fridge for about 1 hour.

For the Lemon Filling.



  • 1 can (14 ounces) Sweetened Condensed Milk
  • 3/4 cup freshly squeezed Lemon juice
  • 1 tablespoon lemon Zest

In a bowl mix the Sweetened Condensed Milk, The lemon Juice and the lemon Zest until the mix became soft and silky. Then pour the mixture o the crust and leave it on the fridge for abour 5 hours. Decorate with Chocolate Syrup, grounded almonds and lemon zest.

Was nice to bake and Freeze this pair of pies, i think they are the definition of opposites right? Like romantic novels and zombies or Swing music and hard rock. Now for me it's time to make something that i trully hate. Clean the dishes and believe me i can TONS of dishes to wash.
