Looking for a Cookie Affair?

Valentine's Day is just around the corner, i can see that the foodie blogs, the pinterest boards and the twitter ads are bursting  with hearts, chocolate Everywhere, Red and pink food coloring on top of everything. It's all about Valentine's day. And Of course to be a Hip and Cool Blog i have to came up with a few treats to share on V-Day. By the Way, we're on February that means that our friends from the other side of the world are celebrating their New Year. The Chinese NewYear. I live in Venezuela and i must say that our chinese comunity it getting bigger and bigger so what better way to celebrate that mixing those celebrations with a batch of Cute little V-day Fortune Cookies.

My experience with Valentines Day i must say that is embarrasing i mean, i never have a date on that day, so i have a certain hate to that particulary day. I'm Not telling that i'm an Anti-romance Robot (come on I read Jane Austen) but there's some things that aren't like it used to be. To me a romantic date is all about conversation, great food (Mostly made by me), wine and some music. I'm not the kind of guy who gives flowers, i give cookies.

Making Fortune cookies was a learning process, not all the ovens bakes at the same so you must know your oven. If you left them too much in the oven you are going to fight with them because it sticks to the tray like glue. If you let them too little they are going to be Soft and saggy so you must play with it and find the perfect timing.

To Make Fortune Cookies your are going to need:

  • 1 Cup Flour
  • 1Cup Sugar
  • 2 Tablespoons Corn starch
  • 1/2 Tablespoon Salt
  • 1/4 cup + 2 Tablespoons Canola oil
  • 1 Tablespoon Vanilla Extract
  • 2 Tablespoon Water.
Before Start, you should have our little Fortunes Ready. I made little fortunes with Jane Austen quotes, you cant write anything you want of them.. even if you hate Valentines Day why not make some "Un-Fortunate Cookies" with some depressing and hillarious fortunes.

  1. Preheat the oven to 300 degrees Fahrenheit. Grease a cookie sheet.
  2. In a medium bowl, Sift the flour, the sugar, the Corn starch and the salt 
  3. Lightly beat the egg whites, vanilla extract, almond extract and vegetable oil until frothy, but not stiff.. Add the dry ingredients on the Eggs Batter in two rounds then add the water. Beat until you have a smooth batter. The batter should not be runny, but should drop easily off a wooden spoon.
  4. Now the real fun starts, if you wanna have pink fortune cookies just add a few drops of food coloring to the batter enough to obtain the desired color.
  5. The best is to do 2 cookies at a time because they harden very fast! Place level tablespoons of batter onto the cookie sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tablespoon of batter forms into a circle 4 inches in diameter. 
  6. Bake until the outer 1/2-inch of each cookie turns golden brown and they are easy to remove from the baking sheet with a spatula (8 to 10 minutes).
  7. Working quickly, remove the cookie with a spatula and flip it over on your work surface. Place a fortune in the middle of a cookie. To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.

Some Extra Tips.
  • I trully Recomend start with one cookie at the time, i thought that i have everything controlled but when i begin to fold the cookies was a whole disaster. Then when you have everything in control you can make 2 or three at the time.
  • As i said before, Making fortune cookies is a Learning process. Dont feel bad if you break a few cookies or you can fold it at time.
  • If your cookies becomes too saggy in the middle is because they weren't thin enough but i have a solution for that. Just leave them in the oven for 5 minutes at 300 degrees and you're going to have crispy cookies.
