Vampire Truffles Chronicles V: Armand Truffles

Armand was a Tricky one, On "Interview with the vampire" Book was a Renaissance Young man who was enchanted with Louis, the New World Vampire, and they were happy for a couple of centuries. On the second book "The Vampire Lestat" Armand was an old vampire who couldn't get adaptted to the new era until Lestat show him the way, also was a jealous and vengeful Vampire. A dark soul with a sweet charm, i think this is a dangerous mix.



For this character i decide to use really dark chocolate, 70% Cocoa chocolate. A way to celebrate his real dark side and combine with something sweet, bit sour and Spicy. It's a Complicated mix? Yes, it is however the flavour is so simple, a Culinary Orgasm just like my friend Rux said.







Dark Chocolate Truffles Filled with Strawberry marmalade and pepper

Ingredients

For the Ganache

9 ounces bittersweet chocolate, finely chopped
2/3 cup cream

For the Filling
1/2 cup Strawberry mamelade (You can made your own Jam for this)
1 teaspoon grounded black pepper

Directions

Place the cream in a small saucepan and scald it until bubbles being to appear around the sides of the pan. Pour the cream over the chocolate and allow it to soften and melt the chocolate for one minute.

Using a whisk, gently stir to incorporate the cream and chocolate. Stir until well-combined.

Cover the truffle mixture with cling wrap and allow it to cool to room temperature. Once cool, refrigerate until it is firm enough to spoon, about 2 hours.

Using a teaspoon or cookie dough scoop, form small 1-inch balls from the ganache and place them on the prepared baking sheet. Repeat with remaining ganache. Return to the refrigerator to chill for another hour.

Prepare the Filling, In a sauce pan add the Strawberry Jam and the pepper. Turn on the kitchen, on medium heat cook the spicy marmalade abour 5 mins. Let it rest

Pour the Spicy Straberries Jam on a disposal plastic pastry bag. Open a little hole on the chocolate ball and fill each truffle with the mix.

Melt about 100 grams of Tempered Dark Chocolate and add your little chocolate Spheres on it, covering the whole ball.

I promised you, you're are going to loose your head when you try this truffles. The blood red of the strawberries with make you feel like a vampire, Just like Armand, the leader of the "Theater Des Vampires"
