Vampire Truffles Chronicles II: Lestat Truffles

Lestat du Lioncurt, on his human life was the younger member of his family. His father never was able to encourage his decisions but Lestat's Mother she spoil him a lot and the relationship between this two were special and even more on his Vampire life. White skin, long blond hair, and Pierce gray eyes. Our Lestat is the main Character on this book and it trully deserve a sweet treat on his honor.




I'm not big fan of the white chocolate, come on, It's not real chocolate but for Lestat Truffles i was going to need white chocolate to embrace his white pale exterior and for his interior i decides to make a mix between honey and roasted almonds. I think it goes really well with the white chocolate. So here's is the Recipe.

Ingredients
For the Ganache

2 tablespoons heavy cream
7 ounces good white chocolate, chopped
1/2 teaspoon good vanilla extract

For the Filling

3 Tablespoons Honey
Whole Roasted almonds

Directions

Place the heavy cream on a pan and heat but dont let it boil. Add the white chocolate and Using a wire whisk, slowly stir the white chocolate and the warm cream until completely melted. Whisk in the vanilla. Cover up and let it chill about an hour or until the mix be pliable but though enough to scoop.

With 2 teaspoons or a 1 1/4-inch ice cream scoop, make dollops of the chocolate mixture and place on a baking sheet lined with parchment paper. Refrigerate for about 15 minutes, until firm enough to roll into rough spheres.

Now the filling. Pour the honey on a disposal plastic pastry bag, Cut the roasted almond on the half.

Open a little hole on the chocolate ball big enough to place inside an almond half and fill it with the honey.

Melt about 100 grams of Tempered White Chocolate and add your little chocolate Spheres on it covering the whole ball. Let it rest and Voilá.
